According to the Mount Sinai study, fried foods, which are abundant in Western diets, are loaded with harmful toxins called Advanced Glycation End products (AGEs). 4.Formation of AGE Proteins:

Proteins are just like keys. They have a very specific shape, so that they can fit into their target “locks,” turning on various cell processes. One of the most recently acknowledged mechanisms causing cell aging is the cross-linking of sugars with these proteins, a process called glycation. When that happens, the shape of the protein changes, and just like bending a key, those modified proteins can no longer open the “doors” of production or repair. As cells fill up with these garbage proteins, called Advanced Glycation End Products (AGE), cell function is compromised, and eventually leads to cell death.
